Prosciutto Melon and Fig Ginger Strawberries, Simple but tasty!
For me the best way of spending my warm summerevening is with some good company enjoying a glass of wine, rose or prosecco with the most delicious, light snacks, ideal for a warm evening.
I like to cook, but not in summer except for some nice pasta. But when it comes to a warm evening with good company I like to make little snacks with different flavours. So…simple no-bake recipes. One of my favourites? Melon with prosciutto!
It goes with formal and casual menus and it’s super tasty!
Buy some Prosciutto di Parma and wrap it around the melon that has been seeded and cut from the rind. Serve with a nice glass of white wine and after a few bites (and sips) you’ll forget all about the heat.
If you want to serve it even more colourful and want to add some more flavour to this classic snack. Add some Mozarella, put it on a skewer together with the prosciutto ansd the melon and put some basil shallot dressing over the mozarelly while it’s on the plate.
For the dressing you’ll need:
1/2 cup olive oil
1/3 cup (packed) fresh basil leaves plus sprigs for garnish
1 medium shallot, quartered
Make the dressing in a food processor, by pulsing the basil and shallot together and adding the olive oil thru the feed tube.
Dessert of strawberries with fresh Ginger and Figs.
Do not wash the strawberries, just take of the green part. Take little pieces of fresh ginger. Fresh ginger is the best choice since it’s not candied or whatsoever, so it still has a little bit of a spicy bite. The figs can be cut into little pieces.
Everything just on top of the strawberries and bon appetit. If you want a little sweetness in it, take some vanillasauce!
Another lovely variation is Pistache, just a little bit of pistache to give it an extra bite

…YUM!! …some of my favourite taste combos… does it get any better than sweet melon and prosciutto di parma! …will have to try with the addition of mozzarella! g*
